    Vinegar is in fact the key ingredient for pickling.

    No, salt is. Stop and think about it - if you put something in vinegar and let it sit around for a few months, it's going to have the consistency of snot when you get around to taking it out of the jar. And I know I've always put salt in pickles, but I don't ever remember using vinegar, except for a refrigerator pickle that had to be eaten within a few days.

    You have to make a brine of vinegar and salt, sometimes peppercorns, and it takes time.

    Look it up.

    Well, I guess it's time to put me on an iceberg and let me float out to sea, because my mind is going. I checked m y grandmother's recipe, and it does indeed call for vinegar - a dilute solution thereof, but there is vinegar in it. (However, I humbly plead amnesia - I haven't actually made pickles since the Reagan administration.)

    PS the spice mixture is at the discretion of the cook - pickling spice, garlic, dill, etc.

    I didn't google it(too lazy) so I didn't see any with just salt - I have a book full of recipes from various family members, and I just looked through that. All of the pickling recipes (cucumbers, mushrooms, and peppers) called for vinegar; unfortunately, I don't have the corned beef/pickled tongue recipe (it was the same brine); now the only thing I know for sure is that I'm not sure.We also made sauerkraut, but that I'm pretty certain was just salt.

    Umeboshi don't use Vinegar, you just rinse Ume fruits(or Apricots) and bury them under a pile of Salt and a weight for a long time, then sun dry them and let them soak back in their own juices
